Green Eggs & Ham Mini Frittatas

Ingredients:

  • 10 eggs
  • 2 cups fresh baby spinach
  • ¼ cup half n’ half
  • ½ teaspoon baking powder
  • ½ cup broccoli, chopped
  • ½ cup onion, diced
  • ¼ lb. Ham lunchmeat
  • ½ cup shredded cheddar cheese
  • Cooking spray
  • Supplies: muffin tin, blender or food processor, measuring cups/spoons, large mixing bowl, cutting board, knife
