Lucky Leprechaun Hummus & Shamrock Dippers

Ingredients:

  • 1 cup spinach
  • ½ medium avocado
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon chopped garlic
  • 1 lemon
  • 1 (15 oz.) can great northern beans, drained and rinsed
  • 4 tortillas, spinach herb flavored (should be green)
  • 1 tablespoon olive oil
  • Shamrock-shaped cookie cutter
  • Supplies: cutting board, knife, food processor or high-power blender, can opener, strainer, measuring spoons, small bowl, baking sheet
