April 20 at 5pm: Everyday Mediterranean Salad with Charlotte
Ingredients:
- 5 oz. baby spinach (or salad greens of your choice)
- 1, 15 oz. can GIANT low sodium chickpeas
- ½ small red onion
- ½ English cucumber
- ½ cup diced roasted red peppers
- ½ cup crumbled feta cheese
- Homemade dressing: 3 tablespoons olive oil, 1 tablespoon red wine vinegar, 1 teaspoon Dijon mustard, 1 teaspoon dried oregano, 1 garlic clove, salt, pepper
- Supplies: Knife, cutting board, large bowl, small bowl, whisk, measuring spoons, strainer
